This is soup is fantastic to have after a workout – the red lentils provide plenty of protein, while the chilli boosts your metabolism.

Created by John, our assistant manager catering & events at Andover Leisure Centre, this warming soup has loads of flavour without being too hot.
It only takes a few basic ingredients to make, so make sure to try it out!
You’ll need (serves 8-10):
1 onion, chopped
4 tablespoons tomato puree
1 tablespoon olive oil
3-4 tablespoons Thai red curry paste
500g red lentils
4 litres vegetable stock
200ml coconut milk
Bread for croutons
If you’d like croutons with your soup, dice the bread and season. Chilli powder would be a great seasoning to use.
Fry the onion in the olive oil until soft.
Pour over the vegetable stock, and simmer for 20-30 minutes until the lentils are tender.
