It’s that time again: leaves are falling, there’s a nip in the air, and pumpkin fever has just about arrived.
This soup was whipped up by our assistant manager catering & events John, who provided just about enough for the Andover Leisure Centre office to fight over.
Take it from us, this is one good soup!
It’s so simple to make, and a great choice for thawing out after an evening of Trick or Treating.
1 medium pumpkin
3l chicken stock (or vegetable, if you wish)
100ml double cream
Nutmeg (to taste)
Salt (to taste)
Pepper (to taste)
Add the stock, and simmer for 30 mins.
Blend until completley puréed.
Serve in bowls, and spoon over the remaining 25ml of cream, and grate nutmeg for decoration
if you’re looking to warm up this autumn and winter, pop into a cafe at Andover Leisure Centre, The Rapids, Knightwood Leisure Centre, or Charlton Lakeside. And remember, nothing gets the blood pumping like some good exercise!
