Recipe of the month: Easy pumpkin soup

It’s that time again: leaves are falling, there’s a nip in the air, and pumpkin fever has just about arrived.

We don’t think there’s any point trying to fight off autumn. Let it in, and warm up with this wonderful pumpkin soup:

This soup was whipped up by our assistant manager catering & events John, who provided just about enough for the Andover Leisure Centre office to fight over.

Take it from us, this is one good soup!

 It’s so simple to make, and a great choice for thawing out after an evening of Trick or Treating.

You’ll need:
1 medium pumpkin
40g butter
3l chicken stock (or vegetable, if you wish)
2 onions
100ml double cream
Nutmeg (to taste)
Salt (to taste)
Pepper (to taste)

Step 1
Peel and dice the onions and pumpkin. You won’t be able to use this one to carve a jack o’lantern!

Make sure to fully scoop out and dispose of the pumpkin seeds.

Step 2
Fry the onions in half the butter until soft.

Step 3
Move the onions to a larger pan, then add the remaining butter and the pumpkin. Lightly fry.

Step 4
Add the stock, and simmer for 30 mins.

Step 5
Blend until completley puréed.

Step 6
Add 75ml of the double cream and season to taste.

Step 7
Serve in bowls, and spoon over the remaining 25ml of cream, and grate nutmeg for decoration

Step 8
Enjoy with warm crusty bread or croutons
